and Nancy Hill. William was a generous and kind-hearted man. When someone was
sick or needed food, or when there was a death in the community, and people
were "sitting up with the dead", William would go to the kitchen, get a large
butcher knife then go out to the smokehouse and cut a large slab of salt cured
bacon from a 'middling', and take the piece of meat to the family in need.
When the meat was sent by relative or friend, it was presented to the person
receiving it with the statement, "Bill sent you this bacon ." It wasn't long
until everyone who knew him started calling him "Bacon Bill." (December 1999,
